A Post-Holiday Reset for January – Nourishing Parsley Soup inspired by the wisdom of St. Hildegard

After the fullness of the holiday season with special meals, sweet treats, and joyful celebrations, January often arrives with a quiet calm.

Nourishing Parsley Soup

Ingredients

1 large handful fresh parsley (flat or curly)

1 carrot, chopped

1 onion, chopped

1 celery stalk, chopped

½ cup spelt grain or small spelt pasta

1–2 garlic cloves (optional)

1 tbsp olive oil

4 cups water or broth

Salt & pepper to taste

Instructions

  1. Warm the olive oil in a pot and sauté the onion, garlic, carrot, and celery until softened.
  2. Add water/broth and the spelt grain or pasta.
  3. Simmer for 25–30 minutes, until the spelt is tender.
  4. Add the chopped parsley during the last few minutes of cooking.
  5. Season gently with salt and pepper.
  6. You can blend the soup for a smooth version, if desired.
